Kaiju Onigiri Sandwich: Inspired by Okinawan Onigiri

Inspired by Okinawa’s beloved pork-and-egg onigiri, our Kaiju combines Spam, egg, kimchi, cucumber, crispy onions, rice, nori, and Kaiju sauce into one unapologetically messy sandwich.

The idea behind our Kaiju Onigiri Sandwich started with Okinawa’s pork tamago onigiri (ポークたまごおにぎり).

Unlike the triangular onigiri many people are familiar with, this Okinawan favorite is commonly made with white rice, nori, pork luncheon meat, and egg, often with additional toppings tucked inside. It’s simple, filling, and designed to be eaten by hand.

We loved that sandwich-like format and wanted to create our own version of it.

We kept the foundation of nori, rice, Spam, and egg, then started adding flavors and textures that made it distinctly ours.

  • Cucumber adds freshness and crunch.
  • Kimchi brings acidity, spice, and a little funk.
  • Crispy fried onions add another savory crunch.
  • And tying everything together is our Kaiju sauce, generously drizzled between the layers so its flavor carries throughout the sandwich.

The result became bigger, bolder, and considerably messier than where we started.

Which is how it earned the name Kaiju—a monster of an onigiri sandwich.

Why Not Just Wrap It Like a Burrito?

We know there is an obvious solution to the mess: Wrap everything tightly inside the rice and nori.

It would certainly be cleaner. But it would also change what inspired us. We want you to see and bite through the individual layers.

Compressing everything into a tight rice wrap would make it easier to eat, but it would start feeling more like a burrito and less like the Okinawa-inspired sandwich that gave us the idea in the first place.
